Ingredients
• 1/2 medium onion
• 1/2 green pepper
• 3 cloves garlic
• 1- 8oz pack white mushrooms (7-8 large)
• 3/4 cup walnuts
• 3/4 cup cooked black beans
• 1 cup dry bread crumbs
• 1 egg substitute- 1 T ground flaxseed 3 T water
• 1/3 cup fresh parsley
• 2 teaspoons Vegan Worcestershire, tamari or soy sauce
• 1 teaspoon of white miso paste
• 3/4 teaspoon paprika
• 3/4 teaspoon onion powder
• 1 teaspoon garlic powder
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• Oil for frying
• For serving

• Green leaf lettuce
• Pickles

•Big Daddy Mapp plant-based sauce
INSTRUCTIONS
• Add walnuts, chopped onion, green pepper, garlic, and mushrooms to a food processor. You may have to do it in batches. Pulse until you have a coarsely but evenly chopped mixture.
• Heat a sauté pan over medium-high heat and add a teaspoon of oil. Transfer the mushroom walnut mixture to the pan, and fry, while stirring, adding in spices and vegan Worcestershire sauce. Continue to cook for 7-9 minutes. Remove the pan from the heat and allow the mixture to cool to room temperature.
• In a bowl, mash black beans. Then add in cooled walnut mixture, the breadcrumbs, white miso paste, and the egg substitute. Mix well to combine and chill the burger mixture for 20 minutes to an hour.
• Divide the mixture and form into six patties.
• Add a drizzle of oil to a large nonstick or cast-iron pan or griddle, and heat over medium-high. When the pan is hot, carefully lay the patties into the pan. Cook for 4-5 minutes on one side, then flip them and cook for another 3-4 minutes.
• To build your burger, toast your buns, lay a cooked patty on the bottom, add your favorite burger toppings, Big Daddy Mapp plant-based sauce, and ENJOY!
