Ingredients for meatloaf

2 egg replacers (2 tablespoons of ground flaxseed mixed with 6 tablespoons of water; let sit for 5 minutes)
- ½ cup breadcrumbs
- ½ teaspoon Salt, or to taste
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- ¼ teaspoon Black pepper, or to taste
- ½ onion
- ½ red bell pepper
- ½ green bell pepper
- 1 cup mushrooms
- 2 carrots
- 2 cups of walnuts, soaked for at least 20 minutes up to 2 hours and drained
- 1 cup of canned cannelli beans, rinsed and drained
- 1 cup of BBQ sauce
- ¼ cup tomato sauce (not spaghetti sauce)
- 3 shakes of hot sauce
Preparation of meatless meatloaf

Preheat oven to 400 degreesIn a small bowl mix your meatless loaf topping sauce together and set aside.Add all vegetables and walnuts to food processor. You may have to work in batches depending on the size of your food processor. And pulse for about 20 seconds until all ingredients are finely chopped, not mushy. If you do not have a food processor. Dice up all ingredients and mash to incorporate.Place the mixture into a medium size bowl and add the egg replacer, ½ cup of the meatless loaf topping sauce, breadcrumbs, salt, pepper, garlic powder and onion powder. Mix to combine.Evenly spread mixture in a loaf pan lined with parchment paper. Pressing it down evenly. Add ¼ cup of the meatless topping sauce on top and cover with foil and bake for 20 minutes.Place the remaining sauce on top and return to oven for an additional 10 minutes.Remove from oven and let it rest for at least 20 minutes, so it is cool enough to cut into slices. Please be patient as it will fall apart if it doesn’t have enough time to rest.Slice and serve with Perfect Green Beans and Mashed Potatoes!
