Super Easy Jackfruit Fajita Recipe
- 1 tablespoon of favorite cooking oil (I use olive oil) or for no oil use water or broth to sauté
- 20 ounce can of young green jackfruit in brine or water
- 1 onion slice
- 1 red bell pepper slice
- 1 yellow bell pepper sliced
- tortillas for serving
- cilantro for serving
- salsa for serving
- guacamole for serving
Fajita Seasoning
- 2 tablespoon chili powder
- 2 teaspoon cumin
- 2 teaspoon smoked paprika
- 2 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon sea salt or to taste
- 1/2 teaspoon cayenne pepper or to taste
- juice of 1 lime
- 1 tablespoon of vegetable base (I use Better Than Bouillon)
Instructions

Drain and rinse your jackfruit in cold water. Use a food processor to chop jackfruit or 2 forks to shred. Every part of the jackfruit is edible, so chop it all up.

Add the oil to a pan and over medium high heat, add jackfruit and vegetable base and sauté the jackfruit until lightly browned, approx. 8-10 minutes.

Then add the veggie slices and ALL the seasoning and sauté an additional 2-3 minutes until the peppers are tender crisp. Do not overcook. Remove from the heat and serve with tortillas and toppings of choice. Enjoy!
