What's the Deal with Jackfruit?

Jackfruit is a versatile fruit that, when cooked, has a texture similar to pulled pork or shredded chicken. It's a great option for those looking to add more plant-based meals to their diet without sacrificing taste or texture. Plus, it's packed with fiber and nutrients, making it a healthy choice for any meal.

How to Make Jackfruit Fajitas

First, gather your ingredients: canned jackfruit, bell peppers, onions, fajita seasoning, tortillas, and your favorite toppings like guacamole, salsa, and vegan sour cream. (Feel free to get creative with your toppings!)

Next, drain and rinse the jackfruit, then sauté it in a pan with sliced peppers and onions until everything is nice and tender. Add your fajita seasoning and let the flavors meld together. (Your kitchen will smell amazing at this point!)

Warm up your tortillas, spoon in the jackfruit mixture, and top with all the fixings. (Don't be shy with the guac!)

Super Easy Jackfruit Fajita Recipe

  • 1 tablespoon of favorite cooking oil (I use olive oil) or for no oil use water or broth to sauté
  • 20 ounce can of young green jackfruit in brine or water
  • 1 onion slice
  • 1 red bell pepper slice
  • 1 yellow bell pepper sliced
  • tortillas for serving
  • cilantro for serving
  • salsa for serving
  • guacamole for serving

Fajita Seasoning

  • 2 tablespoon chili powder
  • teaspoon cumin
  • teaspoon smoked paprika
  • teaspoon garlic powder
  • teaspoon dried oregano
  • 1 teaspoon sea salt or to taste
  • 1/2 teaspoon cayenne pepper or to taste
  • juice of 1 lime
  • 1 tablespoon of vegetable base (I use Better Than Bouillon)

 

Instructions

  • Drain and rinse your jackfruit in cold water. Use a food processor to chop jackfruit or 2 forks to shred. Every part of the jackfruit is edible, so chop it all up.  
  • Add the oil to a pan and over medium high heat, add jackfruit and vegetable base and sauté the jackfruit until lightly browned, approx. 8-10 minutes.
  • Then add the veggie slices and ALL the seasoning and sauté an additional 2-3 minutes until the peppers are tender crisp. Do not overcook. Remove from the heat and serve with tortillas and toppings of choice. Enjoy!
