In the Kitchen on The Hampton Roads Show: Big Daddy Mapp Pasta Salad

Are you tired of the same old boring pasta salad at every potluck? Looking to spice things up a bit (literally)? Well, look no further because Big Daddy Mapp has got you covered with this deliciously unique pasta salad recipe that will have everyone coming back for seconds!

What's in it?

Imagine a colorful array of ingredients coming together in perfect harmony. You've got your rotini pasta, broccoli, banana pepper rings, bell peppers, cucumber, cherry tomatoes, and of course, the star of the show - Big Daddy Mapp Sauce. Optional additions include red onions and chopped parsley for an extra flavor boost.

How to make it?

First things first, cook your pasta according to the package instructions. Once it's nice and al dente, drain it and toss it in a large bowl with half of the Big Daddy Mapp Sauce. Let it marinate for 15 minutes to soak up all that delicious flavor.

While the pasta is chilling out, boil some water for the broccoli. Once it's nice and salty, add the broccoli and let it cook for 2-3 minutes. As soon as it's done, remove it and plunge it into an ice bath to stop the cooking process.

Time to assemble!

Now comes the fun part - assembling your pasta salad masterpiece. Mix in the broccoli, banana pepper rings, bell peppers, cucumber, cherry tomatoes, and any optional ingredients you desire. Drizzle the remaining Big Daddy Mapp Sauce over the top and give it a good toss to make sure everything is coated evenly.

Top it off with a sprinkle of chopped parsley for a pop of color and freshness. Serve it up at your next gathering and watch as everyone's taste buds do a happy dance

 

 

Ingredients

  • 16 ounces (4 cups) rotini pasta or pasta of choice, cooked
  • 1/2 a head of broccoli crown, broken into bite size heads
  • 1/2 cup mild banana pepper rings
  • 1/2 orange bell pepper, thinly sliced
  • 1/2 yellow bell pepper, thinly sliced
  • 1 English cucumber sliced and halved
  • 1 pint of cherry tomatoes, halved
  • 1 Jar of Big Daddy Mapp Sauce  
  • 1/4 cup of sliced red onions, optional 
  • 1/3 cup of olive oil
  • 2 tablespoons of red wine vinegar
  • 2 teaspoons of Italian seasonings
  • Chopped parsley, optional 
Instructions
• Cook pasta as directed on the package. Drain the pasta into a colander. Then add drained pasta to a large bowl and add half of the Big Daddy Mapp sauce. Let it sit for 15 minutes.
• While pasta is resting, boil water for broccoli. Salt water, then add broccoli. Boil for 2-3 minutes and immediately remove and place into ice cold water. Drain broccoli and pat excess water off. 
• To the large bowl with the resting pasta, add, banana peppers, cucumbers, cherry tomatoes, red onion, orange and yellow bell peppers, olive oil, vinegar, Italian seasonings, and parsley. Add the remaining half of the Big Daddy Mapp Sauce and combine. Season with salt and pepper 
• Serve immediately if you like it a little warm or refrigerate and serve when ready. Stir in additional dressing to taste before serving.
