Vegan Mac n Cheese Recipe

Plant-based Cheese Sauce Ingredients 

3/4 c Oat Milk
3 T nutritional yeast
2 T chickpea flour
1/2 t salt
1/2 t onion powder 
1/2 t garlic powder
Pinch of smoked paprika 
Tip: This cheese sauce can be used for many different dishes, including as a topping for cheese broccoli or even add Rotel tomatoes and vegan ground beef and chili powder to turn into a game day queso dip.
 
Vegan Mac n Cheese Ingredients 
2 cups of dry elbow noodles
1 cup of dairy-free milk 
1/2 cup pasta water
2 cups of vegan cheese
4 T vegan butter
4 T vegan cream cheese (I prefer Violife because of it's neutral flavor)
1 cup of plant-based cheese sauce
1 tsp salt
1 tsp garlic powder 
1 tsp black pepper 
1/2 teaspoon smoked paprika 
1/2 tsp onion powder 
Instructions 
1. In a large add elbow noodles to boiling salted water. Follow package instructions to prepare the noodles. 
2. While noodles are boiling, prepare the plant-based cheese sauce by adding all the cheese sauce ingredients to a pot and turn on medium heat to simmer whisking to combined. Let boil about 1 minute until cheese is thickened. Set to side. 
3. Drain noodles, keeping at least 1/2 cup of the pasta water to the side. 
4. On medium low heat, add noodles, cheese sauce, pasta water and the remaining ingredients back to the large pot and stir until combined.
